Is it possible, once a Start Menu is opened, to search/filter the items within it, without using "Quick find"?
Seeking similar functionality to the native Windows Start Menu. (If a user opens Windows Start Menu and begins typing, the system automatically shifts to search mode.)

Currently not. But you can use keyboard shortcuts to run or open menu items. As with standard Windows menus you can underline one of the letters in a menu item's name by preceding that letter with an ampersand (&). When the menu is displayed, such an item can be selected by pressing the corresponding key on the keyboard.
