Sorry, I'm not sure I understand what is the issue. I tried using Unicode Languages Demo and when I type ",ch" it expands to
Hello World in Chinese: 你好,世界!

Do you get different results?

Here is one way. Create a new shortcut, Type: Command

sleep 100
stringsplit, OUT, clipboard, .
send {Del}%OUT3%-%OUT2%-%OUT1%
Select your date string and press a shortcut to make a change.

I'm not sure what you mean, the replacement will be the exact text you specify in a substitute field. There is no difference with rich-text, if you need case sensitive abbreviations, there is an option for that. The best is to use non formatted text.
